Changes in Chlorophylls and Carotenoids in the Peel of ¢¥Fuyu¢¥ Sweet Persimmon Fruit during Cold and CA Storage

Abstract

|
This study was designed to analyze chlorophyll and carotenoid contents of (Diospyros kaki L. cv. Fuyu) during cold and CA storage, and their relations to the affected by storage conditions. The chlorophyll content was very low (20.7 §¶/g fresh. contained 75.4 g/g (fresh. wt.) carotenoids at harvest. The ratio of chlorophyll decreased during storage because of the more rapid degradation of chlorophyll a, atmosphere and temperature had no influence. CA (10% CO©ü + 3% O©ü) condition. was most effective to keep chlorophylls. Total carotenoids increased up to 158% of the initial value of storage, while it began to decrease at 4¡É and 10¡É after 2 months.
